    Description

    Savagnin just loves winemakers. Firstly, we use only French oak. 20% new, 80% old. Secondly, the oak is harvested from a forest in Jura, the same place the Savagnin grape originates. And finally, we use modern and not so modern techniques to create Caméléon. 80% of the wine is crushed, pressed out to tank and transferred to oak once ferment starts. The remaining 20% is juice straight from the press and full wild ferment occurs, on solids, with all it’s complex and eccentric details folded into the final wine. Wild ferment struck match sulphides are entwined with the stone fruit and lemon pith shadows from our ‘clean’ ferment. The palate is textured with a great length and a guillotine of acidity on the back. The powdery mouthfeel is in balance with cumquat and pear skin flavours and just a wink of ‘two fruits’ juice. Enjoy today with food or cellar up to 2030. With all that spice, funk and delicious fruits we recommend a flavoursome fish curry.
