Hot days and relatively cool nights allow for wines of significant power that retain a sense of elegance and grace Sourced from the Moppity Vineyards near Young, the fruit comes from some of the most sought after blocks within the vineyard. Easterly facing and on limestone soils, the minerality of the terroir shines though and combines with the power of ripe Hilltops Shiraz tempered by the delicate elegance that just a 5% addition of Viognier can impart. This wine calls for a beautiful cut of meat. We all have our favourites, but we suggest a 250g Black Angus Sirloin served with roasted beetroot, carrot and whole onions. Their natural sweetness will work well.
