Description
Carefully selecting a combination of new and old French puncheons from amongst our chardonnay barrels, we strive to produce a wine of depth, structure and outstanding flavour for our limited release Cellarhands Chardonnay An alluring nose, complexed by wild fermentation characters, shows a wine that is more savoury in character than fruit driven. Oats & meal present upfront with a flinty “struck match” and a creamy richness supporting the alluring aromas of Persian fairy floss and rich nougat. The palate is not for the feint hearted and is seriously full bodied. Succulent, velvety and showing great structure and balance this wine speaks to your palate long after it has physically disappeared. Very subtle flavours of caramelised apple show though on the finish leaving you with a kiss of fruit falvour. This wine drinks superbly and should be enjoyed in its unadulterated glory. Pair with a 36-month aged French Comte cheese and a handful of walnuts.

Matured in French puncheons (500L) for eight months - 40% new and the balance in 3 year old oak. Add this to the time on yeast lees we experience the rich macaroon and ‘Arrowroot’ biscuit savouriness with the fresh aromas of nectarine, marmalade and orange blossom. The palate shows the influence of oak with a full bodied, rich style of wine exhibiting a nutty, butter character and a charred orange rind fruit profile. The slight phenolics of the wine give texture to a complex and intense chardonnay. Drinking well until about 2025. Food pairing, you can step things up with more richness. Try braised Spanish style chicken with orange, paprika and thyme.
