The much adored and highly anticipated third release of Chloe is finally here!
Fine aromatics of lemon curd Granny Smith apple skins and flinty sherbet are carried on fine bubbles as they lift from the surface of the wine.
The medium weight palate shows just hints of the 12 months of yeast autolysis with lemon tart and arrowroot biscuit characters showing through. There is a fantastic spine of acidity that runs the length of the palate paying homage to the true characteristics of a methode champenoise Blanc de Blancs. Snappy grapefruit leaves the palate crisp and fresh on the finish while the gossamer mousse of bubbles are a decadent massage on the palate. Salut.
This wine will age sensationally over the next few years. Drinking well into 2026 and pairs beautifully right now with Mussels Marinières - Mussels in white wine sauce.
