Utilising the Solera method where the oldest vintaged barrels are topped with newer vintages and then small amounts of wine is drawn from each of the older barrels and used to make the final blend. This then means that these older barrels have some of the oldest material made as well as the freshness of some of our newest. If that makes sense then you now understand the Solera method.Our Eerily Mad is based on a style of wine we are not allowed to use the name of here in Australia and like Champagne the Madeira region of Portugal has protected their style of wine so as a play on words Eerlily Mad was born and we think it is quite fitting.The wine itself is concentrated and quite powerful with the elevated alcohol demanded of this style at 21% but the highly rich fruity sweetness is more than a match for any warmth generated. Dark raisined fruits and Christmas cake aromas support the rich and soft palate of burnt caramel and toffee. The silky warmth on the finish makes this the perfect indulgence for the end of the evening paired with a strong and bitey cheese or just sipped and savoured in front of the fire. Eeerily Mad will reward for many many years to come.
