White Label Vermentino Hunter Valley 2023

    Description

    It is difficult to perceive the colour of this wine except, of course, to say it is white. It is very pale. Aromatically we are presented with green fruits of kiwi and honeydew while savoury cardoman spice and warm talc also show. Delicate florals and aromas of indian desserts add another layer to hold your attention. The palate is no shrinking violet. It presents front and cente with its generosity and roundness. The result from 24 hours of skin contact prior to pressing which provides a slatey/minerally texture to the wine as well. The finish is soft with just a kiss of blossoms as the story fades away. A lovely wine to enjoy in it's youth and over the next 3-5 years. Would be a great pairing with chargrilled octopus and chimi chirri.

      Sourced from the old paddock of the Mt Pleasant stock of vineyards we have never seen bunches like them. In a year with low yield, these bunches were in excess of 750g each! Fruit was machined picked on 24/1/24 and came into the winery at 120Bé. The fruit was run through the crusher and desteemer to sealed 1000L flex tanks before being stored in a refridgerated container at 0OC for 24 hours. The fruit was then tipped directly into the press and the resultant cold juice was clean and pale without oxidation or browning because of the cool temperature. Juice was settled naturally and no finings were used as we wanted to retain the phenolics from the skin contact time. Ferment temps were in the cool range and lasted for around 11 days before wine was taken to 0oC and SO2 was added. Wine was racked off yeast lees after two weeks and held cold in tank until prepping for bottle in June 24.
